The Robert Herder Windmühlenmesser Manufactory in Solingen, Germany, has been handcrafting knives since 1872. Here tradition is paramount, where many of the work steps are carried out as they always have been. At the same time, the manufactory continues to evolve and innovate, introducing various new and exciting bread knife designs in recent decades.

Solingen Thin Grind

Windmühlenmesser bread knives all feature a stainless steel blade, thinly ground in the classic Solingen "thin grind" style and painstakenly blue-burnished or polished. This meticulous craftsmanship creates exceptionally fine, thin teeth that are many times sharper than conventional serrations.

KB2 "BrotBeidhänder" for Both Hands – Twice as Sharp!

The name says it all: the KB2 "BrotBeidhänder" bread knife from the Windmühlenmesser manufactory is sharpened on both sides, making it suitable for both right-handed and left-handed users. The double-edged blade, polished by hand, has fantastic cutting properties, and the ergonomic handle fits very well in the hand. Thanks to the slightly curved, yet symmetrical blade, the bread knife is so well-balanced that cutting is effortless. Overall, the elegantly designed KB2 bread knife is perfectly executed.

For all knives in the exclusive K-series, Windmühlenmesser Manufactory uses a special stainless steel that, due to its high carbon content, achieves a hardness of 60 HRC. For stainless steel, this is extraordinarily hard and enables long-lasting sharpness.
