Our cane bannetons are traditionally made by Herbert Birnbaum in Lower Franconia. This family business has been producing bannetons with high standards of quality and durability since 1847.
What is cane?
Cane is a pure natural product from the rattan palm. Due to the rapid growth of this climbing plant, this type of cane is a particularly sustainable material.
Banneton with linen liner
Using a banneton with a linen liner makes particular sense if you are working with very soft doughs, allowing that the dough will then be easier to remove. Alternatively, there are also banneton covers made from cotton.
My tip: A cane banneton with a linen liner makes a great bread basket for serving at the dining table without leaving any crumbs behind.
