Cane proofing baskets have optimal properties for proofing bread dough. The natural material absorbs moisture and preserves the temperature so that the dough doesn't experience large temperature fluctuations during the proofing process. This makes the crumb loose and more even. Our cane proofing baskets have been manufactured by the Herbert Birnbaum company in Germany since 1847. They are available in various sizes and also in oval. These proofing baskets are also ideal for serving bread. Tip: with the right linen lining you can avoid crumbs on the breakfast table.

Weight Guidelines for Cane Proofing Baskets

The weight information refers to the weight of bread with over 50% rye flour content after baking. For other bread mixtures with a higher proportion of a grain with more volume development, such as wheat and its original forms spelt, einkorn, emmer and kamut, you should choose the next larger form. For dense multigrain breads, the next smaller form should be used.

The weight loss of bread dough during baking is approximately 10-20%, depending on the bread and baking process.

Care instructions

The cane proofing basket is only suitable for proofing. The bread must not be baked in it under any circumstances!

  • I recommend using the rattan proofing baskets with a cover or lining them with a cloth so that you don't have to spray them with release wax.
  • Since the cane proofing basket absorbs water from the bread dough, it must be completely dried after use to prevent mold. To do this, you can place it in the oven with residual heat (but not directly on a hot baking sheet).
  • When dry, the cane proofing baskets can be stacked and stored in a well-ventilated place.
  • From time to time you can clean rattan proofing baskets with water, afterwards they need to dry completely.
