This cast iron enamel bread pan from Riess is my favorite for baking banana bread, king cakes, and small loaves of bread. With a light greasing, every loaf and cake comes out effortlessly, eliminating the guilt associated with harmful ingredients found in non-stick coatings. It makes me wonder how non-stick and silicone baking pans gained popularity in the first place. There's also no need for complex lining with baking paper. Additionally, cast iron enamel pans are extremely scratch and cut resistant, and their resistance to acids makes them ideal for baking with sourdough. The benefits are undeniable: baking in cast iron enamel is both healthy and sustainable.
